TIP: Try serving scallopini over lightly sautéed sweet potato noodles and cherry tomatoes.
Pesto
  1. In a food processor or blender, pulse together all pesto ingredients except olive oil to rough chop.
  2. Add olive oil and blend until smooth.
  3. Set aside.

Turkey scallopini
  1. Season turkey well on both sides with salt and pepper.
  2. Spray a grill pan with cooking spray and heat to medium-high. Add turkey and grill 2 minutes per side until cooked through.
  3. Serve drizzled with Kale Walnut Pesto, and garnish with a few more walnuts.
