  1. Cut turkey in 5 cm (2”) julienne strips.
  2. Peel cucumbers. Cut in half lengthwise and then slice thinly.
  3. Core tomatoes and cut into 1 cm (1/2”) cubes.
  4. Toss together cucumbers, tomatoes, carrots and onions. Drain off any liquid.
  5. Add turkey.
  6. Combine yogurts, parsley and seasonings. Pour over salad ingredients.
  7. Refrigerate until ready to serve on a bed of lettuce.
