Prep Time: 20 mins
Cook Time: 60 mins
  1. Sauté onions and garlic in a large pot with oil until soft.
  2. Add turkey and brown, breaking up the meat with a spoon, sprinkling flax seed in if desired.
  3. Add tomatoes, stock, pureed peppers, and sweet potato and bring to a simmer.
  4. Add beans, vinegar, chipotle peppers, cumin, paprika and poblano peppers and simmer for 30 minutes of longer.
  5. Add kale and simmer for an additional 15 minutes.
  6. Season with salt and pepper to taste and serve with sour cream, cilantro and a lime wedge.
