Cook Time : 60 mins
  1. Combine oregano, olive oil, garlic, capers with juice, salt, pepper and red wine vinegar.
  2. Pour over turkey and toss together making sure all of the turkey is coated, then sprinkle with olives and prunes.
  3. Cover and marinate overnight. When ready to cook, preheat the oven to 375ºF (190ºC) and add the stock and white wine.
  4. Sprinkle brown sugar over the meat and place in the oven, uncovered.
  5. Bake for 1 hour, basting occasionally. To test for doneness, meat should pull away from the bone.
Slow Cooker Method:
  1. Marinate turkey over night as per recipe.
  2. Remove turkey from marinade and brown both sides in a large fry pan; 4-5 minutes per side.
  3. Combine brown sugar with balance of marinade, white wine and stock.
  4. Place turkey in slow cooker and pour marinade mixture over top. Set slow cooker temperature to medium-high and cook for 4-5 hours.
