  1. Heat olive oil in a deep sauté pan and add onion and garlic, stirring until translucent.
  2. Add turkey, seasoning (cumin, turmeric, cinnamon, salt and pepper) and cook for 5 minutes.
  3. De-glaze the pan with lemon juice and poultry stock; then add apricots, currants, chick peas.
  4. Simmer covered for 15-20 minutes or until turkey is tender.
  5. Add mint just before serving over rice or quinoa.
