1 lb (500 g) Canadian Turkey Breast slices, about ¼ in. (1 cm) thick
1 cup (250 mL) finely crushed Tortilla Chips
1 ½ tsp (7 mL) Chili Powder
2 tbsp (25 mL) Vegetable Oil
¾ cup (175 mL) chunky Salsa, mild or hot
⅓ cup (75 mL) shredded Monterey Jack or low fat Mozzarella Cheese
Fresh Coriander and Lime slices (optional)
Substitute turkey tenderloins for turkey slices; increase cooking time, as necessary, depending on thickness.
Directions
In a shallow dish mix lime juice and rind. Place turkey in juice, turning to coat both sides. Marinate 30 to 60 minutes.
Mix crushed chips and chili powder on a piece of wax paper. Coat each side of turkey with crushed chips.
Heat oil in large skillet over medium heat. Cook turkey slices about 2 to 3 minutes on each side just until done. Transfer to a baking sheet. Spoon salsa over turkey pieces, top with grated cheese. Broil until cheese melts.
Garnish with coriander and lime slices, if desired.
