Prep Time: 10 mins
Cook Time: 20 mins
  1. Cook pasta in a large pot of boiling water according to the package instructions.
  2. Heat oil in a large skillet over medium-high heat and add sausage, onion, bell pepper and garlic. Cook until lightly browned.
  3. Add tomato and simmer for 10 minutes.
  4. Remove from heat and stir in spinach and goat cheese.
  5. Season with salt and pepper
  6. Mix sauce and pasta
  7. Sprinkle parmesan on top of each serving.
