Cook Time: 30 mins
  1. In a large frying pan, sauté sausage over medium heat in oil until lightly browned.
  2. Add onion and peppers and continue cooking while stirring for 5 minutes.
  3. Add stock, beans, corn, paprika, cumin, salt and pepper. Bring to a simmer for 15 minutes.
  4. Garnish with cilantro and serve with warm tortillas.
