Serves: 4-6
Prep Time: 15 mins
Cook Time: 30 mins
  1. Sauté turkey pieces in oil until brown. Set browned turkey aside.
  2. In a soup pot over medium heat sauté bacon and onion until golden brown.
  3. Add jalapeno and garlic and sauté until just soft. Add stock, potatoes and spices.  Cook until potatoes are soft.
  4. Add corn and milk and bring to a gentle boil. Blend with a hand blender or table top blender until partly blended but still chunky. Add turkey and bring soup back to a gentle boil.
  5. Season to taste with salt and pepper. Garnish each bowl with fresh cilantro and a spoonful of sour cream.
