Serves : 12
  1. Preheat the oven to 375oF (190oC).
  2. In a medium bowl, mix panko bread crumbs, flax, salt and pepper.
  3. In a small bowl, whisk egg, egg white, milk, apple juice and hot sauce (if using).
  4. Add the liquid ingredients to the dry ingredients, stir and set aside.
  5. In a large bowl, mix turkey, celery, onion, apple, parsley and garlic. Add the ingredients from the medium bowl, and stir to combine.
  6. Generously oil a 12-cup muffin tin, and then evenly distribute the turkey mixture among the cups.
  7. Bake in a preheated oven for 40 minutes, or until a meat thermometer inserted into the centre of muffin reads 165oF (74oC).
  8. Remove muffins from oven and let them rest for five minutes.
  9. Loosen them by running a knife around the edges, serve immediately on their own or with ketchup and/or hot sauce.
