  1. Preheat oven to 350ºF (180ºC).
  2. In a large oven-proof casserole with a tight-fitting lid, brown turkey thighs on medium-high heat, with 2 Tbsp (30 mL) olive oil.
  3. Remove turkey, add the balance of the oil and add onion, garlic and peppers and sauté for 3-4 minutes.
  4. Add eggplant, zucchini, mushrooms, stirring to combine.
  5. Add canned tomatoes, oregano, rosemary, salt and pepper and simmer for 5-6 minutes.
  6. Add turkey thighs to the vegetable mixture, cover and bake for 30 minutes.
  7. Uncover and bake for another 10 minutes. Serve sprinkled with toasted breadcrumbs and chopped parsley.
