  1. Make the chutney – place all the ingredients in a food processor or blender and blend to a paste.
  2. Add a splash of water, if required, to loosen the chutney. Taste and add more lemon juice and salt, as required.
  3. To build the sandwich, spread some of the chutney on the buttered bread slices.
  4. Layer the cooked turkey and cucumber slices on top of one slice, and sandwich the two slices together. Cut into triangles to serve.
